Easy chicken tortellini soup

Ingredients
2 tbsp Olive Oil2 large Onions, diced4 cloves Garlic, crushed2 tbsp Minors Chicken Base2 qts water2 14.5 oz. cans Diced Tomatoes16 oz chopped frozen Spinach1 package Rozzano five cheese tortellini2 cans BJ's canned chickenOptional: top with Parmesan (not included in nutritional calculation)
Directions
1. Heat oil in large pot over medium-high heat. Add onion and garlic, reduce heat to medium and cook slowly until translucent, about 10 minutes.
2. Increase heat to high, add chicken base and tomatoes with liquid and slowly pour in water. Cover and bring to boil, then reduce heat and simmer for 10 minutes.
3. Add frozen spinach to soup, raising heat to keep simmering if necessary. Cook 5 minutes.
4. Add chicken, cook for 5 minutes. Carefully add tortellini and cook 5 more minutes.
5. Serve immediately
Optional: top with Parmesan
