12 Large white mushrooms (about 1 1/2lbs)2 Tbsp Promise Light Butter Spread1 1/2 cups Finely chopped Zucchini1 cup Finely chopped Red or Orange Bell Pepper1/2 cup Finely chopped Onion8 oz Lean Ground Turkey3/4 tsp Ground Cumin1/4 tsp Salt Sense1/8 tsp Ground Black Pepper2 Tbsp Shredded Fat-Free Cheddar Cheese
Preheat Oven to 375 degrees. Remove and finely chop mushroom stems; reserve 1 cup. In a 12 inch non-stick skillet melt Promise Light Butter Spread over medium heat and cook zucchini, bell pepper, onion and reserved mushroom stems. Stirring occasionally about 5 minutes or until tender. Add turkey and cumin stirring occasionally until browned about 5 minutes. Stir in salt and pepper then set aside.
On a baking sheet (spray with cooking spray) arrange mushroom caps evenly and stuff with the turkey mixture. Bake for 25 minutes or until mushrooms are tender. Sprinkle with cheese and bake til just melted.
Serving Size: Makes 12 appetizers (6, 2 mushroom servings)
