Easy Banana Blueberry Muffins

Ingredients
Into Large size Bowl One mix:1 cup white whole wheat flour1 Tbsp baking powder1/2 tsp baking soda1/8 tsp salt1 tsp cinnamon1 tsp nutmegInto medium size bowl mix1/2 cup blueberries1/2 cup mashed banana1/4 cup sugar1 large egg1/2 tsp vanilla1/4 cup applesauceResrve the walnuts
Directions
Turn on oven to preheat to 350 degrees F. Line muffin pan with paper liners or grease.

Put dry ingredients (except sugar and walnuts) in large bowl. Use a whisk to blend them and break up any clumps.

In medium bowl, mix fruits, "wet" ingredients and sugar. When thoroughly mixed, make a well in the dry ingredients and add the wet. Mix together. It's okay if the batter is not perfectly mixed--over stirring will toughen the muffins. Put batter into muffin cups. (Batter is a bit thick because of the gelatinous nature of mashed bananas.)

Sprinkle walnuts on top. Bake time depends on oven. Expect muffins to take about 15 minutes but check at 12. They're ready when a toothpick inserted in the center of a muffin comes out clean. Let cool and enjoy.
