Guilt Free Pineapple Orange Cake

1 package yellow cake mix1 can (11 oz) mandarin oranges, undrained4 egg whites1/2 cup unsweetened applesauceTopping:1 can (20 oz) crushed pineapple, undrained1 package sugar-free instant vanilla pudding mix1 carton (8oz) reduced-fat whipped topping
In a large mixing bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13-in x 9 in baking dish coated with nonstick cooking spray.
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
In a bowl, combine the pineapple and pudding mix. Fold in whipped topping just until blended. Spread over cake. Refrigerate for at least 1 hour before serving.

SOOOO GOOD! I used sugar free fat free pudding mix and lite cool whip, as well as reduced sugar yellow cake mix. When I started to put the topping on the cake it seemed like there would be too much...but after tasting the cake with the topping on it, I dumped it all on! fluffy & DELICIOUS!! - 4/6/08

Oh, this cake absolutely deserves 5 stars! It's easy to make and taste wonderful. I made it for Easter to bring to my sisters. We all loved it. I made it again this morning and brought it to work. I've printed the recipe several times for my co-workers. I will make this over, and over! - 3/27/08
