Black bean chicken chili

Ingredients
Olive Oil, 1 tbsp1/2 chicken breast, dicedCarrots, raw, 1 cup, choppedOnions, raw, .75 cup, choppedGreen Peppers (bell peppers), 1 chopped Garlic, 2 cloveCanned Tomatoes, 1 can, undrainedBeans, black, 3 cup, drainedVegetable Juice Cocktail (V8), 6 fl ozOregano, ground, 1 tbspChili powder, 1 tbsp*Cumin seed, 1 tbsp
Directions
Makes 6 -1 cup servings

Heat olive oil in a dutch oven or soup pot. Add chicken, sprinkle with chili pepper, cumin and oregano. Saute 3-4 min. Add garlic, onion, carrots and pepper. Saute 5 min., stirring. Add undrained tomato and drained beans - I use 1-30 oz can beans. Add small can V-8. Add more spices/herbs to taste. Add a cup of water if too thick.
