Low Cal Celery Soup

Ingredients
Olive Oil1 Head of celery, finely chopped1 Medium Onion, chopped1 tsp crushed garlic 1 tsp dried Rosemary2 Knorr Veggie bouillon cubesWater to cover.
Directions
Heat oil in pot, add garlic and heat.
Finely chop (easier to blend ) celery and add to pot.
Chop Onion and add to pot.
Cook veg until slightly soft. Season with Salt and Pepper
Cover with water ( enough to fully cover veg plus some more)
Add stock cubes and dried rosemary.
Bring to boil and let simmer for preferred time or until water JUST covers veg.
Blitz using a hand blender.
Serve
