Pan Fried Breaded Pork Chops

2 bone-in, center cut pork chops, apprx. 5 oz each1 TBS reduced fat mayo1/4 cup Progresso Italian Style dried bread crumbs1 TBS Extra VIrgin olive oil
Spread mayo over surface of both pork chops.
Dip chops into bread crumbs and pat to cover the chops well. let stand at room tempurature for about 10 minutes allowing the breadcrumbs to dry on the meat a bit. Heat olive oil in a heavy skillet (I prefer cast iron) over medium high heat. Place chops in heated skillet and fry on each side for about 10-15 minutes, browning well on each side. Internal temp should be 145 degrees.
