Red Potato Salad

3 lbs red potatoes - not peeled, chopped into cubes4 eggs1 1/2 cups mayo (use reduced fat)2 TBL milk (recipe uses 1% but it's only 2 TBL so use whatever you have)1/2 cup dill pickle relishSalt & Pepper - to taste
1. Bring large pot of salted water to a boil. Add potatoes and eggs to water. Take the eggs out at 10 minutes and continue cooking the potatoes for an additional 5 minutes (or until soft enough to break with a fork.) Drain and cool. Place in a medium bowl. Peel and dice eggs and add to potatoes.
2. In a small bowl, whisk together mayo, milk, mustard, dill relish, salt and pepper. Pour over potatoes and mix well. Cover and chill in the refrigerator until serving.
Serving Size: Makes 10-12 small side dishes (recipe calculates for 10)
