Tiff's Baked Eggplant Parm

2 eggplants, sliced thinly long ways2 cups mozzarella part skim shredded cheese3 cups marinara sauce.5 cup plain breadcrumbs1/2 teaspoon garlic powder1/2 teaspoon oregano
Mix breadcrumbs, garlic powder and oregano on a plate. Combine. Slice eggplant length wise (about 7 slices per eggplant). Wet slices with water and dredge into the breadcrumbs. Make a layer of eggplant in a baking dish. Put half of the marinara sauce on eggplant, then put 1 cup cheese on top. Make another layer of eggplant. Place rest of marinara sauce on top, and then rest of cheese. Bake in oven at 400 degrees for 30 minutes.
Serving Size: Each serving is 1/4 of a 9x13 baking dish.
