2 tbs olive oil8 chicken thighs1 onion, chopped4 garlic cloves, chopped1 tbs chili powder1 tsp smoked paprika1 tsp ground cumin1/2 tsp ground cinamon2 chipotle peppers in adobo sauce, chopped1 14 oz can fire roasted tomatoes1 1/2 cup low sodium chicken broth2 tbs peanut butter 2 1/2 oz. dark chocolate, 60%Cilantro for garnish
Heat oil over medium heat, add chicken and brown on both sides. Remove from pan & set aside. In same pan saute onion until translucent, add garlic and spices. Saute for 2 minutes. Add peppers, tomatoes, broth, peanut butter, abd chocolate. Simmer for 10 min. Transfer sauce to food processor and blend till smooth. Add salt to taste. Place chicken pieces in large pot, cover with sauce and simmer for 45 minutes or until chicken is completely cooked. Garnish with cilantro, if using
