South Beach Diet Aggkaka

Ingredients
3 tbsp olive oil3 eggs (or egg white substitutes)1 c almond milk1 c coconut milk (contains *healthy* saturated fat)1/8 c splenda[1 tsp salt (optional)]1 cup whole wheat flour
Directions
Put 3 Tbsp olive oil in a 9"x9" pan and place in hot oven 450 degrees to heat (careful not to leave too long because this was meant for butter... I removed the pan from the oven after it was warmed up)
Beat 3 eggs,
1 c almond milk
1 c coconut milk
1/8 cup splenda
[1 tsp salt (optional)]
1 cup whole wheat flour.
remove pan from oven and add mixture to heated oil. mix well.
return to oven @ 450 degrees for about 20 minutes (until edges are golden or light brown)

Serve with sugar free maple syrup.

Serving Size: Makes about 4 servings.
