3/4 cup quick oats1/2 cup brown sugar, packed3/4 cup granulated sugar1.5 cups white flour1/2 tsp salt2 tsp baking powder1 1/4 tsp cinnamon1/2 tsp nutmeg3/4 cup applesauce1 large egg1 can diet cola
Pray a 13x9 pan with non-stick cooking spray. Preheat oven to 350 degrees.
Mix together dry ingredients (down through nutmeg).
Stir in applesauce, egg, and diet cola.
Spread into pan, bake for 30 minutes or until toothpick comes out clean.

Made this twice: 1st time I used a combo of applesauce and oil, and used dried blueberries instead of frozen (it's what I had on hand). Turned out tasty but too dry. 2nd time, I used frozen blueberries, 3 cups of oatmeal (I ran out), and added about 1/3 cup water. It was moist and delicious. - 1/28/19
