3 cups whole wheat flour3/4 cup sugar3/4 cup brown sugar1/2 tsp salt1tsp pwdr ginger1tsp cinnamon1 tsp baking soda2 tsp baking pwdr2 cups grated zuchinni1 navel orange (juice and zest)2 large eggs2 tsp vanilla1/4 cup olive oil3/4 cup unsweetened applesauce
preheat the oven to 350. In a large bowl combine flour, white and brown sugars, salt, cinnamon, ginger, baking pwdr and baking soda. Set asside. Grate zuchinni into a small bowl. Grate the peel of the orange with a fine grater, and juice the orange, add the juice and the zest to the zuchinni. Whisk both eggs together add to the dry ingredients, add applesauce, oil, vanilla, and zuchinni orange mixture. mix until moistened but dont overmix. pour into a prepared cake pan and bake for about 40 min or until a toothpick comes out clean.
