Red Onions minced 3 TbspRed Bell Peppers minced 6 TbspCanned Whole Kernel Golden Corn 1/3 CupRaw Cilantro chopped 3 TbpsCumin Ground a DashKosher Salt a DashSpinach uncooked 2 cupsMexican Shredded Cheese2 Eggs6 Tbsp Egg Whites
1. Blend the eggs and egg whites together with the cumin, salt and a tablespoon of cilantro.
2. Put that into the skillet and cook on medium heat.
3. Sprinkle with cheese then add spinach then add the *corn salsa.
*Corn salsa is the onion and peppers minced up and the cilantro chopped up mixed together with the corn.
Serving Size: makes 2 servings
