Mexican Breakfast Scramble

4 oz. Jennie-O Lean Italian Seasoned Ground Turkey2 cups Egg Beaters Southwestern style1/8 cup chopped green pepper1-2 tbsp chopped onion1/2 cup Reduced Fat Shredded CheeseSalsa (I used Pace Picante Salsa Mild)
Cut green peppers and onion, place in non-stick pan with Ground Turkey and cook until done.
While cooking turkey in a different non stick pan add the 2 cups of Egg Beaters Southwestern style and cook until done/scrambled. Then combine and mix. Top with 1/8 cup reduce fat shredded cheese and 2 tbsp of salsa.
Place on your choice of tortilla for a breakfast burrito or instead of ground turkey, use portabella mushrooms for a great taste and vegetarian meal as well! You can top with chopped tomatos or fat free sour cream, depending on how you enjoy your meal...
