Kung Pao Tofu

1 cup chopped carrotts1 cup chopped celery1 cup small mushrooms, halved.5 cup chopped water chestnuts2 TBSP Trader Joe's Thai Peanut Sauce1 oz. 1% milk6 oz. Wild Wood high protein tofu, diced (any super firm tofu will work) Trader Joe's Olive Oil spray
Chop carrots, celery, and water chestnuts.
Wash and halve mushrooms.
Dice tofu
In a small bowl, mix Thai peanut sauce with milk and set aside.
Heat skillet and coat with Trader Joe's olive oil spray
Add celery, water chestnuts, mushrooms and tofu and stir fry for 3 mintues.
Add the thai peanut sauce mixture and bring to a boil.
Add carrots, cover and simmer for 10 minutes or until tender.
**Makes 2 services.
