Oatmeal Baked Chicken

Ingredients
1lb. Skinless Chicken Breast1/2tsp Garlic Powder2tbsp. Melted butter (Kroger value spread used)1c.-Oats1tsp. Paprika1tsp. Chili Powder1tsp. Salt1/2tsp. Cumin1/4tsp. Black PepperNon-stick spray1 baking dish about 13-in. x 9-in. x 2-in.
Directions
1. Coat a 13-in. x 9-in. x 2-in. baking dish with nonstick cooking spray; set aside.
2. Melt the margarine and the garlic together let the chicken "marinade" in that for a few minutes while putting the rest of the ingredients together.
3. In a shallow bowl or large resealable plastic bag, combine oats, paprika, chili powder, salt if desired, cumin and pepper.
4. Dip chicken in milk, then coat with oat mixture. Place in prepared baking dish.
5. Bake, uncovered, at 375 degrees F for 45-50 minutes or until juices run clear.

    I adapted. no cumin (since none on hand), less garlic (allergies), added Worcestershire sauce, some ginger. Doubled amount of sauce, baked with rice in oven, so first 40 mins. were covered, then last 10 uncovered. - 2/13/12
