Rawsome Spinach Korma

Ingredients
Sauce:1/2 cup carrot 1/2 cup onion 1/4 cup water 2 tablespoons mild curry powder 1 teaspoon chili powder 1/4 cup soaked cashew nuts 1/4 teaspoon turmeric 1/4 teaspoon cumin 1/4 teaspoon garlic powder 1 chopped tomato 2 dates Vegetables:1 small onion, finely sliced1 medium carrot, finely sliced (I used a vegetable peeler to make ribbons)1 medium red pepper, finely sliced8 oz. mushrooms, finely sliced10 oz. bag of baby spinach leaves
Directions
Place all of the ingredients for the sauce in a blender and mix well until liquified.

Pour sauce over the veggies and mix well. Let the mixture marinate for 10 minutes or so.

Stir again and then serve.
