Don's Blueberry Bran Muffins

3 cup Bran Flakes, ready to eat (store brand is ok)1 ea. egg, x-large2 Tbs Canola oil1 1/2 cup 2% milk1 1/2 cup Unbleached white AP flour1 tsp Baking soda1/2 tsp Cinnamon, ground1/4 tsp salt1/3 cup Splenda Brown sugar blend1 1/4 cup blueberries1 cup Walnut halves, chopped
Preheat oven to 400 degrees (385 if convection)
Prepare 12-muffin tin with cooking spray
Rinse and drain blueberries
Coarsely chop walnut halves
Beat the eggs, combine with milk and oil.
Pour over Bran flakes and mix thoroughly
Allow to soak a minimum of 5 minutes.
While Bran is soaking, sift together flour, baking soda, cinnamon, and salt.
Add brown sugar blend, blueberries and nuts.
When most of the milk mixture has been absorbed by the flakes, add to the flour mixture.
Mix until just combined (do not over-mix)
Portion equal amounts into the prepared muffin tins and bake for approx. 15 minutes or until toothpick comes out clean.
Do NOT over bake.
