1 18 oz jar of peanut butter, creamy works best1 two pound bag of powdered sugar plus 2 cups4 sticks of butter or majorine (do not use low fat)3-4 cups of chocolate chips1-2 tsp of parafin wax (Helps with melting of chocolate and nice sheen to the candy)
Mix peanut butter, sugar and butter until creamy. Roll batter into 1" balls. Place balls on waxed paper. Freeze for at least 1 hour to overnight. Melt chocolate in a double boiler slowly and dip each of the frozen peanut butter balls into the chocolate leaving a part of the top uncovered. Freeze a second time.
For easy clean-up use mini-muffin cups and when dipping put into mini-muffin cups and freeze. Makes for easy sharing. Once chocolate is hardened, put all buckeyes in to an air tight plastic container or freezer bag. Keeps for many months if you can keep from eating them. Make 12 dozen
