Braised Sweet and Sour Cabbage

1 T Earth Balance or olive oil 1/2 onion, sliced1 t caraway seeds1 head cabbage, halved, core removed and finely chopped (use any variety--I prefer red or Savoy)2 T raw sugar 1/4 cup apple cider vinegar pinch salt pepper to taste
Melt the Earth Balance in a large Dutch oven set over medium-high heat; add the onions and caraway seeds and cook, stirring often, until the onions soften and start to take on some color, about five minutes. Add the cabbage and 1/2 cup water, stir and cover the pot. After five minutes, remove the lid and stir the cabbage. Add the sugar, stir well to combine, then add the vinegar, continuing to stir.
Cover, reduce heat to medium-low, and cook for 20 minutes. The cabbage should be tender but not mushy, with minimal liquid.
Season with salt and pepper and serve immediately.
