Curried Red Lentil Soup

2 Tbs Extra Virgin Olive Oil1 large onion chopped4 cloves of garlic, pressed or chopped2 Tbs fresh ginger root, peeled and minced1.5 Tbs red curry powder1.5 Tsp ground cinnamon1 Tsp ground cumin2 bay leaves1.5 cups red lentils, rinsed and picked over8 cups low-sodium non-fat chicken broth3 Tbs fresh cilantro, chopped3 Tbs fresh parsely, chopped2 Tbs fresh lemon juice2 Tbs hot mango chutney8 0z plain non-fat yogurt
Add oil to a heavy stock pot and heat over medium heat. Add onions, garlic, ginger, jalpenos, curry powder, cinnamon, cumin and bay leaves and simer for 5 min or until onion is translucent.
Add lentils, and chicken broth and bring to a boil. Reduce heat and simmer for 40 min.
Discard bay leaves and stir in fresh parsely and cilantro, lemon juice, and chutney. Add two cups per bowl and a dollop of yogurt.
Serving Size: Makes 8 2-cup servings
