Spinach, onion and garlic quiche with parmesan in a couscous crust

2 cups leftover Couscous1 tbs butter2 cups thinly sliced onions2 cloves of garlic minced1 tbs olive oil1 tsp dijon mustard3 eggs3/4 cup milk14 cup mozzarella cheese1/2 cup parmesain4 slices of tomatosalt and pepper1/3 cup of cilantro
Mix 1 tbs butter with leftover couscous
Dump the couscous into an 8" pie plate. Press it down and up the sides of the dish.
Saute the onion, garlic and spinach in the olive oil
Spoon onions, garlic and spinach into the couscous crust
Mix together milk, eggs, dijon, 14 of the parmesan, and salt and pepper. Poor over the pie.
Top with tomato slices, then remaining parmesan, mozzarella and cilantro. Bake at 350 for about 45 minutes, or untl set and the edges have started to brown.
Cut pie in quarters and serve.
