Mini spinach egg fritata

Ingredients
Spinach - 5 CupsChicken Sausage - 2 large linksExtra Sharp Cheddar - 1 cup12 eggs
Directions
Blend spinach and chicken sausage in a food processor until chopped well. Shred the cheese and mix it all into a large bowl with the eggs. Spray a mini muffin pan with olive oil and fill each cup 3/4 of the way. Bake on 350 degrees for 30 minutes or until done.
