low fat cheese cake

Ingredients
CRUST1 cup bran cereal crumbs (food processor)3 T sugar1/2 t cinnamon3 T butter, meltedFILLING4 (8oz) pkgs neufchatel cheese, softened1 cup splenda with fiber2 t lemon juice1 t vanilla1 cup Egg Beaters or liquid egg whites
Directions
heat oven to 300. Spray 9" springform pan with cooking spray. Melt better in small pan, then mix in other crust ingredients til moistened. Press firmly on bottom of spring form pan. In mixing bowl, beat neufchatel til smooth, then gradually add other ingredients. Beat til smooth, and pour over crust. Bake 1 hour 5 minutes to 1 hour 15 minutes, til firm except for very center. Cool completely on wire rack. Cover, refridgerate for 4 hours. Remove from pan and enjoy with fresh fruit on top.
