Chicken & Veggie Stir Fry

3 oz Grilled Chicken Breast1/2 cup Broccoli7 Baby Carrots1/4 cup Mushrooms1/4 cup Onion1/3 cup Frozen Sweet corn1 Large Egg White1/2 cup Cooked Brown Rice1 tbsp Olive Oil1/2 tbsp Low Sodium Soy Sauce
1. Heat Olive Oil in pan
2. Chop Chicken, broccoli, carrots, mushrooms and onions into bite size pieces
3. Place carrots, onions and frozen corn into hot oil
4. After a few minutes add chicken, mushrooms, cooked brown rice and add the broccoli on top of the rice so the steam from the cooked rice will steam the broccoli.
5. Move food to the side of the pan and cook egg white in cleared area.
6. After egg cooks add soy sauce and toss.
Eat up-YUM!!!
