Fried Taters & Onions

Ingredients
2 Medium Idaho Potatoes washed and sliced thin1 Cup Yellow Onion Sliced Thin1/4 C. Canola Oil1 tsp salt1 tsp Black Pepper
Directions
1) In a large Skillet bring oil to med-high heat
2) add potatoes & onions cover and let cook 5 -7 min.
3) turn potatoes & onions and add salt and pepper cover and let cook 5 - 7 min more.
4) check for doneness and add cooking time accordingly. I like mine sort of crisp
