Potato, raw, 2 cup shredded3 large eggsSalt, 1/2 tspOnions, 1/4 c gratedCheddar Cheese, 1 cup, shredded, packedCauliflower, 1 medium, broken into small flowerets1 medium clove garlic, minced1 c chopped onion1-3 Tbs butterdash of thyme1/2 tsp basil1/2 tsp saltMilk, 1/4-1/2 cuppaprika
Heat oven to 400. Salt 2 c grated raw potato and leave it in a colander to drain for 10 minutes. Squeeze out the excess water and add it to 1 beaten egg and 1/4 c grated onion. Pat it into a well-oiled 9-inch pie or quiche pan. Bake 40 minutes until browned.
Saute onions and garlic, lightly salted, in butter for 5 mins. Add herbs and cauliflower, cut in small pieces, and cook, covered, 10 mins, stirring occaionally. Spread half the grated cheese into the baked crust, then the saute, then the rest of the cheese. Beat together milk and 2 eggs. Pour the custard over the cheese and dust with paprika. Bake 30-40 mins, until set.
