Mini Quiche

Ingredients
2 oz reduced fat feta cheese1 whole egg3 egg whites1C fresh spinachsalt & pepper to taste
Directions
Add whole egg and egg whites to bowl and blend, adding rough chopped spinach and mix again. Crumble feta into mixture and add Salt & Pepper to taste. Add water to thin out mixture if desired.
Pour into cup cake tins half way. Bake at 350 for 15-20 minutes or until toothpick inserted in center comes out clean.
