Easy Brown Rice Risotto

Ingredients
1 package Birdseye Steam Fresh Whole Grain Brown Rice1/2 cup chopped onion2 cloves garlic, minced8 ounce carton fresh mushroom, washed and sliced1/2 cup frozen peas1/4 cup white wine1/4 cup parmesan cheese shreddedSalt and Pepper to taste1 Tbs each Smart Balance Buttery Spread and olive oil
Directions
In large frying pan heat and mix margarine and oil. Add
onions and garlic, saute until onions are translucent. Add mushrooms and saute til almost tender. Meanwhile cook the frozen rice in the microwave for three minutes. When out of microwave add to mushroom mixture and mix well in pan. Add peas and wine ( at this point you may need to add a tablespoon or so of water if rice is sticking). When well mixed season to taste with salt and pepper. Sprinkle top with cheese. Cover and reduce heat to very low. Let sit for about five minute prior to serving.

    I made this with Birdseye Steamfresh Brown and Wild Rice with Peas, Corn and Carrots. I also used low salt chicken broth instead of white wine. It was as advertised - easy, quick and scrumptious. I asked my husband to take it off the table before I ate all of it! - 9/1/15
