1 C. All-Bran1 C. Mashed Sweet Potatoes1 C. Raisins1 1/4 C. 2% Milk1 egg1 1/2 C. Ground Oatmeal1/4 C. Olive Oil1/2 tsp. Stevia1/2 tsp Salt1 T. Baking Powder1 tsp. vanilla extract1 T. Pumpkin Pie Spice
Preheat oven to 400 degrees. Prepare muffin pan by spraying with Bakers Joy to prevent sticking.
Pour milk over all bran & let sit for five minutes. Add rest of Ingredients. Spoon mixture into 12 prepared muffin tins.
Makes 12 regular sized muffins.
**IF you dont want to use sweet potatoes, just add another cup of all bran.
