Fresh Tomato Bisque

3 Tbs raw butter1 large onion, chopped2 stalks of celery, chopped2 cloves garlic, minced4 lbs fresh ripe tomatoes, coarsely chopped10 leaves fresh basil, torn2 sprigs of fresh thyme2 tsp fresh oregano or dried2 tsp salt4 Tbs dry red wineFresh ground black pepper2 cups unsweetened almond milkRaw parmesan largely grated as a topping
1. In a large stockpot, melt the butter over low heat and add onion celery and garlic. Saute until tender.
2. Add tomatoes, basil, thyme, oregano, salt, wine, and pepper. Simmer for 20 min.
3. Puree the mixture in batches in a blender. Return to the pot and add the almond milk. Reheat, without boiling. Serve in bowls and add a few shavings of raw parmesan cheese.
Serving Size: Makes 8 2-cup servings
