Cranberry Ricotta Pancakes

Ingredients
1 cup Flour (1/2 cup whole wheat,1/2 cup white)1/4 cup granulated white sugar1 tsp baking powder1/4 tsp cinnamon1/4 tsp nutmeg1 cup part skim ricotta cheese1 tsp vanilla extract3 eggs, separated1/4 cup dried cranberries
Directions
1. Whisk together flour, sugar, baking powder, cinnamon and nutmeg. Set aside.
2. Beat egg whites until stiff. Set aside.
3. In a separate bowl, whisk together ricotta cheese, vanilla extract and egg yolks until combined.
4. Add flour mixture and stir until just combined.
5. Do not over mix. Fold in beaten egg whites along with cranberries.
6. Cook on a greased, preheated griddle.
