Mom's Quick and Easy Chili

Ingredients
1/2 lb lean ground Beef (or turkey, chicken or pork)1 small or medium onion, peeled and diced1/2 green pepper, seeded and diced1 clove garlic, minced (less or more according to tastes)15.5 oz can Brooks Chili Hot Beans14 oz can Diced tomatoes in juice, no salt added1 8-0z can V8 juice, Low sodium (or tomato juice, or water if no juice available)Seasoning to taste: salt, black pepper, cumin, chili powder, paprika, cayenne
Directions
1. Brown the beef with diced onion and green pepper. Drain grease and return to pot.
2. Add beans (and sauce), tomatoes, juice and seasonings to taste.
3. Stir together. Simmer for 30-45 minutes, or longer if desired.
4. (Optional) - serve over noodles; and/or pass crackers, shredded cheddar cheese, diced raw onions, diced raw green peppers.


Serving Size: Makes 4 - 1 cup servings (or 2 2-cup servings)
