chicken and white bean chili

Ingredients
1 lb boneless, skinless chicken breasts, well rinsed1 qt low sodium chicken stock or broth1 med onion, chopped1 15-oz can cannellini beans (white kidney beans), with liquid1 16-oz can diced tomatoes, with liquid1 4 1/2-oz can chopped, peeled green chilies1 green bell pepper, diced1 Tbsp chili powder1 tsp minced garlic
Directions
Cut chicken into 1/2-inch cubes. Put chicken stock in a large pot; add chicken & onion. Simmer 20 mins.
Add remaining ingredients; simmer another 40 mins, stirring occasionally.

Serving Size: makes 6 cups, 1 serving = 1 cup
