Chicken and Veggie Manicotti

Ingredients
1 pound bonless/skinless chicken breast1 can Healthy Request Cream of Chicken soup1.5 cups water4 ounces (about 4 servings) reduced fat shredded cheddar cheese2 cups of your favorite frozen veggies12 manicotti pasta shells, uncooked1/4 cup reduced fat grated parmesan cheese
Directions
Preheat oven to 375.
Coat 13x9 inch baking dish with cooking spray.
Cut chicken into 1/2 inch strips.
Mix soup, shredded cheese and water in microwave safe bowl. Cook in micro for about 3 minutes or until all is melted and mixture is well blended.
Pour 1/3 of soup mixture onto bottom of baking dish. Add veggies to remaining soup mixture.

Stuff manicotti shells with chicken and place in baking dish. Pour remaining soup mixture over pasta covering completely. Sprinkle with parmesan cheese. Cover pan with foil and bake 30-40 minutes (turning pasta 1/2 way through to be sure it cooks evenly) or until pasta is tender and chicken is cooked thoroughly.

Makes 4 servings of 3 manicotti each.
