Citrus Carrot Salad

Ingredients
4 carrots peeled and grated 2 celery stalks and 2 scallions green included (spring onions) finely chop½ cup roasted peanuts½ cup raisins or currants1 tbsp poppy seeds3 tbsp lemon juice1 tsp prepared mustard
Directions
In a big bowl mix the lemon juice and mustard. Then add, Finely grate carrots, chopped celery and chopped spring onions, peanuts and raisins then poppy seeds mix well serve.
