Ingredients:Extra Virgin Olive Oil, Kirkland (1 tbsp = 3 tsp)Onions, raw, 1 cup, choppedadd:Zucchini, 2 cup, sliced *Peppers, sweet, red, fresh, 2 cup, chopped Yellow Sweet Corn, Frozen, 1 cup kernels Beans, black, 1 can rinsed & drained =284 grams Chicken Broth, .50 cup Hunt's Ketchup, 6 tbsp (approx)add:Chicken Breast, no skin, 4 ounces pre-cooked & chopped*Lemon Juice, approx .50 cup
Directions
Sweat chopped onion in a large stainless skillet until translucent....add Peppers, zucchini, frozen corn...cook approx 5 min ( I like my veggies slightly under cooked..for flavor and fresh color) Finally add Ketchup/lemon juice (zest optional) and chopped grilled/cooked chicken breast
