Tomato sauce (w/ Baked potatoes)

1 small Onion, chopped2 cloves Garlic, crushed2 fl oz Coffee liquor3 fl oz Water190 grams Tomato Sauce2 tbsp Cider Vinegar2 tsp Paprika1 tsp Chili powder1 tsp Salt1 medium Whole tomato, chopped40 grams Green bell pepper, chopped1 tbsp Olive Oil
To make sauce, heat oil in a saucepan, add he onion and cook over a medium heat, stirring occasionally, for 5 mins. Add garlic and stir for 30 sec. Add the liquor and water and bring to boil. Add tomato, tomato sauce, vinegar, chilli and paprika, reduce heat and cook uncovered for 10 mins, until the sauce is thick.
When sauce is cooked, use blender to blend it smooth and return it back to heat for 2 mins.
