*Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" (remove)Trader Joe's Ground Turkey Breast, 8 oz (remove)*Trader Joe's Organic Extra Virgin Cold Pressed Olive Oil, 1 tbsp (remove)Onions, raw, .5 medium (2-1/2" dia) (remove)Yellow Sweet Corn, Frozen, 0.5 cup kernels (remove)Garlic, 3 cloves (remove)*Onion powder, 1 tbsp (remove)*Cumin - Ground, McCormick (1 tbsp), .5 tbsp (remove)Chili powder, .5 tbsp (remove)Salsa, .25 cup (remove)Oregano, ground, .5 tbsp (remove)El Pollo Loco, 6 inch corn tortilla, 6 serving (remove)
Directions
heat pan, add evoo to coat
add red pepper & onion, cook 1-2 minutes
add turkey & cook for 3-5 minutes
add garlic & spices, cook for 2 minutes
add corn & salsa, cook until turkey is cooked through.
serve on warm corn tortillas
(you can top with lettuce, cheese, or sour cream if desired, but make sure to add to your calorie count)
