Ingredients
Mexican Pulled Pork Wraps3 pounds pork tenderloin1-14 � oz. can diced tomatoes with diced green chiles1-4 � oz can diced green chilies2 tsp taco seasoning (low sodium)1 tsp cayenne pepper or to taste3 cloves of garlic; minced1/2 cup chopped onion
Directions
Mix all together in slow cooker, cover and cook 8 hours on low or 4-5 hours on high. Take out pork, using 2 forks pull apart pork and add back into sauce.
Serve with coleslaw vegetables rolled in warmed, low calories, high fiber & protein tortillas, on healthy buns or wrapped in a lettuce leaf.
