Low Calorie Vegetable Fish Bake

Ingredients
I fillet frozen or fresh Swai (or 2 tilapia fillets)3 cups Diced Eggplant (peeled or unpeeled)1 can del monte diced tomatoes and jalapeno1 cup Onion1 cup mushrooms1 cup spinachSpices to taste
Directions
Pre heat oven to 350
Spray 2 quart baking dish with cooking spray
Salt and spice fish and add to dish
Add cut vegetables
Add drained tomatoes
Cook for approx 30 minutes until fish flakes in the center
