12 large eggs6 cups chopped broccoli2 T chopped onion8 oz feta cheese or fat free ricotta(I currently changed the ingredients to FF ricotta to reflect lower calories)Olive oil pan spray1/4 to 1/2 cup water
Chop broccoli and onion and saute on low in large skillet sprayed with olive oil pan spray until tender. Beat 12 eggs with 1/4 to 1/2 cup water. Mix in broccoli and onion. Pour into casserole dish (I used 9x13) that has been sprayed with olive oil pan spray. Dice feta cheese and sprinkle evenly over the top of the casserole. Cover and bake at 350 for 40 min. Cut into 12 sections.
