Stevia Sweetened Blueberry Oatmeal Muffins

1 1/4 cups oats 1 cup all-purpose flour 1/3 cup Stevia in the Raw 1 tablespoon baking powder 1/2 teaspoon salt 2 Tbsp Flaxmeal 1 cup almond milk, vanilla, unsweetened (room temp) 1 egg (room temp) 1/4 cup coconut oil (melted) 1 cup blueberries, rinsed and drained
Pre-heat oven at 425 degrees F. Combine dry ingredients. Mix in wet ingredients until dry ingredients are moistened. Fold in blueberries. Fill greased muffin pan 3/4 full (they don't rise TOO much). Bake for about 20min or until golden.
