Chicken Helper Mexican Style

Ingredients
1 pound ground chicken1 cup chopped onion 2.5 cups left over brown rice1 can yellow corn, no salt added1 can black beans6 tsp taco seasoning (or to taste) 1 jar salsa, chunky, medium heat 1/2 cup water
Directions
1. Brown the chicken with the onion, drain any fat.
2. Add the salsa and taco seasoning.
3. Add the corn, black beans, and rice.
4. Add water if needed. Simmer for 10 minutes.

Serving Size: makes approximately 8 - 1 cup servings
