Turkey Quinoa meatloaf muffins

1 lb white breast ground turkey.5 cup dry quinoa1.34 cup water2 cups diced onion1 cup diced celery1 cup shredded carrots1 egg12 Tbsp barbeque sauce1 teaspoon chopped garlicseasonings to tastebring water to boil and add quinoa & carrots. cook on medium for 12 minutes or until there is no more liquid in pan. Leave set for 12 more minutes.Spray pan & saute onion & celery until onions are translucent. Add garlic and cook 1 minute more. Add to bowl with turkey & egg. Mix with quinoa. Divide mixture between 12 muffin cups. Put 1 tablespoon of barbeque sauce on top. Cook for 30 minutes or until a thermometer inserted comes out to 160 degrees.
350 degrees for 40 minutes
