Holiday Bran Muffins

Ingredients
1½ cups bran flakes2 cups all bran cereal [twig like cereal]1 cup boiling water2 cups buttermilk2 beaten eggs2 tsp vanilla2½ cups flour plain2 tsp cinnamon½ cup oil1½ sugar
Directions
Put cereal in a large bowl and add boiling water, mix lightly till moist. Let stand while mixing other ingredients.

Add sugar, eggs, oil, buttermilk and vanilla and mix by hand.

Mix together flour and cinnamon

Combine dry ingredients with buttermilk mixture.

Add moistened cereal last, dont overmix.

Bake at 400 for 20 minutes

Batter can be store in refrigderator covered for six weeks.
