Carrot Salad

3-4 large carrots, peeled and shredded (about 2-3 c. total)2 T. raspberry balsamic vinegar (plain balsamic is good, too!)1/2 T. olive oil2 tsp. honeysalt to taste1/4 c. chopped italian parsley
In salad bowl, whisk together vinegar, oil, honey, and salt till well combined. Add shredded carrots and parsley and stir till well coated with dressing.
Serve chilled or at room temperature. If you're making this in advance, use a little less vinegar, as the dressing flavor gets stronger the longer it sits.
