2 large 16oz (454gm) bags Pre washed chopped Kale 4 strips bacon finely chopped 1 medium onion finely chopped1 tbsp smart balance1 tbsp hot German mustard1-2 quarts water (to cover the kale)
Sauté bacon, onion and smart balance to brown a little. Add 1/2 the water and deglaze the brown stuff off the bottom of the pot into the water to get the bacon flavor into the broth. Add kale but pick out any stems. Bring water to a boil and cook down some of the kale. add more water to just below the top of the kale. Bring to a light boil again and then bring the heat all the way down. Stir in mustard and a little bit of salt, careful with the salt as the sausages and bacon are already salt. Add any sausages and pork chops you like (not included in the calories). Polish kielbasa and smithfield smoked pork chops works well with this dish. Simmer for about 2 hours. Serve with boiled potatoes.
