Cashew Cream

Ingredients
1 cup cashews1/2 - 1 lemon1/ - 1/4 cup waterSalt to taste
Directions
Using a Magic Bullet or nut grinder, grind the cashews until they are light and powdery. Add juice of 1/2 - 1 lemon, salt to taste, and enough water to make a nice thick puree (add a little at a time to see what works best - about 1/8 - 1/4 cup should work). Serve with celery, apples, on toast, on potatoes, vegetables, chicken, fish - embellish with herbs, spices, or whatever you wish to try. This can also be sweet by omitting the lemon and salt, and adding a little honey. You can also add a little cocoa powder.
